Bake These Funfetti Party Cookie Bars for Every Celebration!
These Funfetti Party Cookie Bars are tailor-made for celebrations of all kinds. I recently baked a batch for my best friend Stacey’s birthday, and they were an absolute hit! We had a lovely dinner with friends, and I knew these would be the perfect addition to her special day. My initial thought was that she could take them home and savor them all to herself – after all, it was her birthday! But of course, being the wonderful person she is, she ended up sharing them with us after dinner and even took some to her colleagues the next day. I secretly hope she managed to stash a few for herself, because I certainly would have!
These bars are incredibly versatile, making them ideal for birthdays, anniversaries, graduations, holidays, or simply as a thoughtful gift. Their festive appearance instantly elevates any gathering. Plus, you can easily customize the sprinkle colors to perfectly match the theme of your event, adding a personalized touch that guests will surely appreciate. Imagine red and green sprinkles for Christmas, pastels for Easter, or school colors for a graduation party – the possibilities are endless!

Essential Ingredients for Your Funfetti Party Chocolate Chip Cookie Bar Recipe
- All-purpose flour: The foundational dry ingredient for structure.
- Baking soda: Provides lift and contributes to the chewy texture.
- Salt: Balances the sweetness and enhances all the flavors.
- Unsalted butter, at room temperature: Essential for that rich, buttery flavor and tender crumb.
- Brown sugar: Adds moisture, chewiness, and a deep, caramel-like sweetness.
- Granulated sugar (such as Zulka® Morena® Pure Cane Sugar): Contributes to the bar’s structure and sweetness, creating a perfectly balanced flavor.
- Egg: Binds ingredients together, adding richness and helping with the rise.
- Vanilla extract: A crucial flavor enhancer that complements the chocolate and butter.
- Semi-sweet chocolate chips: The classic choice for a melty, rich chocolate burst.
- Vanilla or white chocolate chips: Adds a delightful creaminess and a different layer of sweetness.
- ½ cup sprinkles, plus extra for topping: The star of the funfetti show, adding color and a slight textural crunch.

How to Master These Funfetti Party Chocolate Chip Cookie Bars
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or aluminum foil, leaving an overhang on the sides to easily lift the bars out later. Lightly spray the paper/foil with non-stick cooking spray.
- In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar using an electric mixer on medium speed. Beat for about 2 minutes until the mixture is light, fluffy, and smooth. This step is crucial for achieving a tender and chewy texture.
- Add the large egg and vanilla extract to the butter and sugar mixture. Mix on low speed until they are just combined. Be careful not to overmix at this stage.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Sift this dry mixture over the wet ingredients in the large bowl. Mix on low speed until the dry ingredients are just incorporated into the wet. It’s vital not to overmix the dough, as this can lead to tough cookie bars. Stop mixing as soon as no streaks of flour are visible.
- Gently fold in the semi-sweet chocolate chips, vanilla chocolate chips, and ½ cup of sprinkles using a wooden spoon or a sturdy spatula. Stir just enough to evenly distribute the mix-ins throughout the thick dough. Again, avoid overmixing.
- The cookie dough will be quite thick. Drop spoonfuls of the dough evenly onto the prepared baking sheet. Using your fingers or a rubber spatula (lightly sprayed with non-stick spray to prevent sticking), gently spread the dough out to fill the pan. Don’t worry about making the corners and edges perfectly even; the dough will spread further as it bakes.
- For an extra festive touch and to ensure every slice has plenty of colorful charm, sprinkle some additional chocolate chips and sprinkles generously over the top of the blondie dough before baking.
- Bake for 20 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs, not wet batter. Be careful not to overbake, which can result in dry bars.
- Once baked, remove the pan from the oven and let the bars cool completely in the pan on a wire rack. Cooling is important for the bars to set properly and be easy to cut.
- After the bars have fully cooled, use the parchment paper overhang to lift them out of the pan. Place them on a cutting board and slice into 12-15 squares, depending on your desired size.
- Serve and enjoy these delightful Funfetti Party Cookie Bars!

Serving and Storage Tips for Your Funfetti Cookie Bars
These Funfetti Chocolate Chip Cookie Bars are best enjoyed fresh, but they also store wonderfully. Once cooled and cut, you can store them in an airtight container at room temperature for up to 3-4 days. For longer freshness, consider refrigerating them for up to a week. - ½ cup firmly packed light brown sugar
- 6 tablespoons granulated sugar I used Zulka® Morena® Pure Cane Sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup vanilla chocolate chips
- ½ cup sprinkles plus extra
Instructions
- Preheat the oven to 350°F and line a 9×13 pan with parchment paper or tinfoil and spray with non-stick spray.
- In another large bowl, using an electric mixer at medium speed, beat together the butter, and sugars about 2 minutes and is smooth.
- Add the eggs and vanilla and mix on low speed until mixed in.
- Sift the flour, baking soda and salt over the wet mixture and mix together until just incorporated. Do not keep mixing – do not overmix.
- Add chocolate chips, vanilla chips and sprinkles in, stirring with a wooden spoon, again no overmixing, just until incorporated. Dough will be very thick.
- Spread thick cookie dough out evenly by dropping spoonfuls onto the baking sheet and spread out with fingers or it helps to spray a rubber spatula with non-stick spray. Dough will spread out while baking, so you don’t have to get the corners and edges perfect.
- Sprinkle some extra chocolate chips and sprinkles to the top of the blondies.
- Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
- After bars have cooled, lift the parchment paper out and cut the bars. Makes 12-15 bars depending how big you make them. Enjoy the party!
