Essential Ingredients for Your Dream Brownies
Crafting these extraordinary brownies requires a few simple yet high-quality ingredients. Each component plays a crucial role in achieving the perfect balance of fudgy, fluffy, and chocolatey goodness. Here’s a breakdown of what you’ll need for each decadent layer:
For the Fudgy Brownie Base:
- Unsalted Butter: The foundation of rich, fudgy brownies. Unsalted allows you to control the salt content precisely.
- Granulated Sugar: Sweetens the brownies and contributes to their moist, chewy texture.
- Eggs: Act as a binder, provide structure, and add richness, ensuring your brownies are perfectly dense.
- Vanilla Extract: A touch of vanilla enhances the chocolate flavor, adding depth and warmth to the overall taste.
- Unsweetened Cocoa Powder: The key to an intense, deep chocolate flavor. Choose a good quality cocoa for the best results.
- All-Purpose Flour: Provides the necessary structure without making the brownies cakey.
- Salt: Balances the sweetness and amplifies the chocolate notes. Don’t skip it!
- Baking Powder: A small amount helps the brownies rise slightly, giving them a tender crumb without becoming overly airy.
For the Dreamy Marshmallow Layer:
- Marshmallow Cream (or Fluff): This provides the incredibly soft, spreadable, and sweet foundation for your marshmallow layer.
- Mini Marshmallows: Adding mini marshmallows to the cream creates delightful pockets of extra gooeyness and texture, making the layer even more substantial and inviting.
For the Luxurious Chocolate Topping:
- Butter: Essential for a smooth, glossy, and spreadable chocolate ganache. It adds richness and helps the ganache set with a beautiful sheen.
- Chocolate Chips: Whether you prefer semisweet chocolate chips for a classic, balanced flavor or milk chocolate chips for a sweeter, creamier profile, either will create a fantastic top layer. The quality of your chocolate will significantly impact the final taste.
Crafting Your Marshmallow Fluff Brownies: A Step-by-Step Guide
Follow these simple instructions to create your own batch of irresistible Chocolate Covered Fluffy Marshmallow Brownies. Precision and care at each step will ensure a truly spectacular dessert.
- Prepare Your Baking Pan: Begin by preheating your oven to 350 degrees F (175°C). For easy removal and clean cuts, generously spray an 8×8 inch baking pan with non-stick cooking spray. Line it with parchment paper, leaving an overhang on two sides to create “handles” for lifting the brownies later. Spray the parchment paper again for extra non-stick insurance.
Step-by-Step for the Fudgy Brownies:
- Melt the Butter: In a medium saucepan, gently melt ½ cup of unsalted butter over low heat. Alternatively, you can melt it in the microwave in short bursts, stirring frequently, until fully liquid.
- Combine Wet Ingredients: Remove the melted butter from the heat. Immediately whisk in the granulated sugar, vanilla extract, and eggs until the mixture is smooth and well combined. This ensures the sugar dissolves nicely and the eggs are incorporated without scrambling.
- Add Dry Ingredients: Gradually beat in the ⅓ cup of unsweetened cocoa powder, ½ cup of all-purpose flour, ¼ teaspoon of salt, and ¼ teaspoon of baking powder. Mix just until combined; be careful not to overmix, as this can lead to tough brownies.
- Bake the Brownies: Spread the brownie batter evenly into your prepared 8×8 inch pan. Bake in the preheated oven for 22-27 minutes. It’s crucial not to overbake; the brownies should still be slightly moist in the center when tested with a toothpick (a few moist crumbs are ideal, not wet batter). Overbaking will result in dry brownies.
Assembling the Perfect Marshmallow Layer:
- Add Mini Marshmallows: As your brownies begin to cool slightly after coming out of the oven, evenly sprinkle ½ to 1 cup of mini marshmallows over the warm surface. The residual heat will soften them slightly.
- Prepare and Spread Marshmallow Cream: Place 7 oz of marshmallow cream in the microwave for approximately 20 seconds. This will make it more pliable and easier to spread. Stir it with a butter knife or spatula until smooth, then pour it over the mini marshmallows and gently spread it out to form an even, fluffy layer.
Creating the Smooth Chocolate Topping:
- Melt Chocolate and Butter: In a microwave-safe bowl, melt ¼ cup of butter. Add 1 cup of chocolate chips to the melted butter and stir to coat them. Microwave for another 30 seconds, then stir vigorously until the mixture is smooth and creamy. If necessary, microwave for additional 10-20 second intervals, stirring well after each, until it reaches a perfectly pourable consistency. Be careful not to overheat the chocolate, as it can seize.
- Pour and Spread Chocolate: Quickly pour the warm chocolate mixture over the marshmallow layer. Working swiftly, spread the chocolate evenly across the entire surface. The quicker you spread, the smoother and more uniform your chocolate topping will be.
- Cool and Serve: Allow the brownies to cool completely at room temperature. During this process, some of the marshmallow might playfully peek through the chocolate layer, especially around the edges. This is perfectly normal and simply adds to their homemade charm and character!
- Cut and Enjoy: Once fully cooled, use the parchment paper overhangs to carefully lift the entire slab of brownies out of the pan. Place them on a cutting board and slice into individual squares. Alternatively, you can cut them directly in the pan. Store any leftover brownies sealed in an airtight container at room temperature to maintain their gooey texture.
Serving Your Decadent Brownies
These marshmallow fluff brownies are truly at their best when served and enjoyed at room temperature. Allowing them to cool completely before slicing ensures that the layers set properly, giving you clean cuts and the ideal gooey, fudgy texture. The intense chocolate flavor, combined with the soft marshmallow, creates an experience that’s nothing short of “OH MY!” It’s a total chocolate and marshmallow heaven, perfect for satisfying even the most intense sweet cravings.

Expert Tips for Making the Best Chocolate Marshmallow Fluff Brownies
Achieving brownie perfection is easier with a few tried-and-true tips and tricks. These suggestions will help you create flawless layers and ensure your brownies are a resounding success every time.
- Mastering Parchment Paper for Easy Removal: One of the most helpful tricks for baking brownies (and other bars or cakes) is using parchment paper. For an 8×8 inch baking pan, I always recommend lining it with at least one sheet of parchment paper, but two crisscrossing sheets work even better. First, spray the pan with non-stick cooking spray, then lay down one sheet of parchment paper. Spray it again, and then place a second sheet crisscrossing the first. Ensure the parchment paper is long enough on the sides to create “handles” that you can use to easily lift the entire slab of baked brownies out of the pan. This technique not only prevents sticking but also makes cutting much easier and cleaner. Parchment paper is an invaluable tool for any baker!
- Optimal Storage for Texture: I strongly advise against storing these brownies in the refrigerator. When chilled, the chocolate topping will harden significantly, turning into a brittle “chocolate shell.” This makes the brownies difficult to cut and compromises the delightful gooey texture of both the marshmallow and the brownie base. They are far superior at room temperature. If you do happen to refrigerate them, a quick pop in the microwave for a few seconds will warm them up, softening the chocolate and bringing back their delicious chewiness.
- Ingredient Quality Matters: While the recipe uses common ingredients, opting for good quality butter, cocoa powder, and chocolate chips will noticeably elevate the flavor profile of your brownies. A rich, dark cocoa powder, for example, will yield a more intense chocolate brownie base.
- Don’t Overmix: When combining the wet and dry ingredients for the brownie batter, mix just until no streaks of flour remain. Overmixing develops the gluten in the flour, which can lead to tough, dense brownies rather than the desired fudgy texture.
Creative Customization: Chocolate Topping Options
While our chocolate ganache recipe is fantastic, there are other ways to create a delicious chocolate topping, allowing for flexibility and personalization.
- Store-Bought Frosting Shortcut: For a quick and easy alternative, you can substitute the homemade chocolate layer with a tub of your favorite store-bought chocolate frosting. Simply scoop the frosting into a microwave-safe bowl and heat it in the microwave for 10-20 seconds. This will make it soft and pourable, allowing for effortless spreading over the marshmallow layer. Just be careful not to overheat it, as excessive heat can alter the frosting’s consistency and make it oily.
- Different Chocolate Varieties: Experiment with different types of chocolate chips in your ganache. Dark chocolate chips will yield a richer, less sweet topping, while white chocolate chips could be used to create a contrasting layer (though not for a “chocolate covered” brownie).
Elevating Your Marshmallow Layer: Options for Personal Taste
The marshmallow layer is undeniably a highlight, and you can customize it to your preference.
- Marshmallows or Cream Alone: If you prefer a completely smooth marshmallow layer, you can opt to leave out the mini marshmallows from the marshmallow cream. The marshmallow cream alone will still provide a wonderfully sweet and gooey middle.
- Adjusting Layer Thickness: For a thinner marshmallow layer, simply reduce the amount of marshmallow cream and mini marshmallows you use. Conversely, to achieve an even thicker, more substantial marshmallow presence, you can increase the quantities.
- Embrace the Bumpy Texture: I personally love to add mini marshmallows into the marshmallow cream because it creates a delightful bumpy texture and allows some of that gooey marshmallow to delightfully peek out through the chocolate layer in various places. This “character” adds to the rustic, homemade appeal and, combined with the chocolate, offers fantastic “chocolate crackles” when you bite into them!
- Half the Ingredients for Thinner Layers: If you desire thinner layers of both marshmallow and/or chocolate, feel free to use half of the ingredients specified for those particular layers. This is great for those who prefer a more brownie-forward experience with just a hint of marshmallow and chocolate.

You are going to absolutely adore these super-gooey, utterly delightful Chocolate Covered Fluffy Marshmallow Brownies! Whip up these easy, one-bowl scratch brownies topped with chocolate covered marshmallow for a true fantasy!
Prep Time: 5 mins
Cook Time: 25 mins
Course: Dessert
Servings: 12 Servings
Ingredients
Brownies:
- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
Marshmallow Layer:
- 7 oz marshmallow cream
- ½ cup to 1 cup of mini marshmallows
Chocolate Layer:
- ¼ cup butter, melted
- 1 cup chocolate chips
Instructions
Directions
- Preheat oven to 350 degrees F and spray an 8×8 baking pan with non-stick cooking spray lined with parchment paper.
Brownies
- In a medium saucepan, melt 1/2 cup butter. (Can also microwave)
- Remove from heat, and whisk in sugar, vanilla and eggs.
- Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
- Spread batter into prepared pan.
- Bake in preheated oven for 22-27 minutes. Do not over bake.
Marshmallow Layer
- As brownies are cooling, add ½ to 1 cup of mini marshmallows on top of brownies and spread out.
- Place marshmallow cream in microwave for 20 seconds and stir with a butter knife and pour on top of the marshmallows and even the marshmallow cream out.
Chocolate Layer:
- Melt butter in microwave and add chocolate chips and stir to coat the chocolate chips. Place back in microwave for 30 seconds and mix until creamy. Place back in micro for 10-20 seconds if needed.
- Pour chocolate mixture on top of marshmallow layer and spread out quickly.
- Let brownies cool. Some of the marshmallow might peek out of the chocolate, because of the marshmallows, but it’s ok. 🙂 Gives it character.
- Lift brownies out of pan and cut on a board with parchment paper or you can cut in the pan. Keep brownies sealed in an airtight container.
Notes
- Use half of the ingredients if you want thinner layers of marshmallow and/or chocolate layers.
- Don’t recommend putting these in the fridge. The chocolate turns to a chocolate shell and it’s not as good. However, if you do refrigerate them, just pop them in the microwave for a few seconds for a warmed-up delicious treat!
