Ingredients

  

  • 1 cup Blanched Almond Flour extra fine
  • ¼ cup Cacao Bliss Super Powder
  • ¼ cup Unsweetened Cocoa powder or Dutch Process can be used.
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • â…“ cup Coconut oil melted and cooled
  • ½ cup Erythritol Sweetener or 2/3 cup for sweeter, I like Lakanto Baking Monkfruit sugar
  • 3 large Eggs
  • â…” cup coconut cream or 1/3 cup Greek yogurt with 1/3 cup almond milk
  • 2 teaspoons Vanilla extract
  • ½ cup sugar-free chocolate chips Enjoy Life or Lakanto

Instructions

 

  • Preheat the oven to 350 degrees F. Line 12 cups in a muffin tin with paper liners.

  • In a bowl, combine almond flour, Cacao Bliss, cocoa powder, erythritol, and baking powder.

  • Add the vanilla extract, eggs, and coconut cream or Greek yogurt/almond milk mixture. Mix well.

  • Add the melted coconut oil and combine thoroughly.

  • Gently fold in the sugar-free chocolate chips and stir until evenly distributed.

  • Lightly spray the cupcake liners with non-stick spray. Using a scoop, divide the batter evenly among the 12 muffin cups.

  • For an extra touch, sprinkle more chocolate chips or some chopped walnuts on top of each muffin before baking, if desired.

  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. This indicates they are fully cooked.

  • Allow muffins to cool completely in the tin before removing to a wire rack. This helps them set and prevents them from crumbling.

Notes

I find that using a silicone muffin pan often yields the best texture for these muffins, allowing for easy release and a perfectly baked exterior.

You can easily substitute coconut oil with grass-fed butter or regular butter if preferred, depending on your dietary needs and taste preferences.

For a slightly firmer muffin texture, consider adding a small pinch (about ¼ to ½ teaspoon) of a thickener like tapioca flour to the dry ingredients.

If your batter seems a little too thick, especially when adjusting for different brands of flour, feel free to add a tablespoon or two of almond milk or coconut milk to reach the desired consistency.

  • 3 tablespoons tapioca flour
  • ¼ cup Cacao Bliss Superfood powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 eggs room temp
  • ¼ cup coconut oil melted
  • 2 tablespoons chocolate melted
  • 2 teaspoons vanilla extract
  • â…“ cup non-dairy milk room temp
  • â…” cup sugar-free monk fruit sweetener or maple syrup (1/2 cup)
  • ½ cup sugar-free chocolate chips

Instructions

 

  • Preheat oven to 375 degrees F. Grease or line a muffin pan with paper liners.
  • Melt coconut oil and chocolate chips together in a microwave-safe bowl or small saucepan over low heat. Set aside to cool slightly.
  • In a separate small bowl, combine coconut flour, tapioca flour, Cacao Bliss powder, and cocoa powder. Whisk them together until thoroughly mixed, then set aside.
  • In a large bowl, whisk together the eggs, the cooled melted coconut oil and chocolate mixture, monk fruit sweetener (or maple syrup), and vanilla extract until smooth.

  • Gradually add the dry flour mixture to the wet ingredients and stir until just combined. Incorporate the non-dairy milk. If the batter appears exceptionally thick (coconut flour absorbs a lot of liquid), you may add an extra tablespoon or two of non-dairy milk, but note that the batter should be thick, not pourable.

  • Fold in about half of the sugar-free chocolate chips into the batter.
  • Using a spoon or scoop, divide the batter evenly into 8-10 muffin tins, filling them about two-thirds full.

  • Sprinkle the remaining chocolate chips on top of each muffin for a beautiful finish.
  • Bake for 18-25 minutes, or until golden brown and a toothpick inserted comes out clean. Let them cool in the muffin pan for 10 minutes before transferring them to a wire rack to cool completely.
