Ingredients
Graham Cracker Crust
- 1 cup graham cracker crumbs
- ¼ cup unsalted butter melted
- 2 tablespoons light brown sugar
Brownies
- Brownie Mix add ingredients as called out to make brownies
Marshmallow Filling
- 4 tablespoons unsalted butter softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 3 tablespoons milk or heavy cream
- 1 cup marshmallow cream
Chocolate Buttercream
- ½ c salted butter at room temperature
- 2 – 2 ¼ c powdered sugar
- ¼ c unsweetened cocoa powder
- 11/2 teaspoon vanilla extract
- 1-2 tablespoons whole milk half-and-half, or cream
Instructions
- Preheat oven to 350ºF (175°C). Line a 12-cup muffin tin with muffin liners, or spray with non-stick spray. This preparation ensures easy removal and perfect cupcakes every time.
Graham Cracker Crust
- In a medium bowl, combine all the ingredients for the graham cracker crust until they are completely mixed and resemble wet sand.
- Evenly divide the crumbs among the 12 muffin tins, pressing them firmly and smoothly onto the bottom of each liner. This forms the essential S’mores base.
- Set the prepared muffin tin aside while you begin to prepare the brownie batter.
Brownies
- Prepare your favorite brownie mix according to the package directions. Once ready, divide the batter evenly among the 12 muffin tins, pouring it over the graham cracker crusts.
- Bake in the preheated oven for 20-30 minutes, or until a toothpick inserted into the center of a brownie comes out with moist crumbs attached, but not wet batter. Be careful not to overbake, as this can make the brownies dry.
- Remove the brownie cupcakes from the oven and allow them to cool completely in the muffin tin before attempting to remove them. This step is crucial for structure.
- While the brownie cupcakes are cooling, use this time to prepare the luscious marshmallow filling.
Marshmallow Filling
- In a medium mixing bowl, cream the softened unsalted butter with an electric mixer until it is light and fluffy, usually for about 2-3 minutes.
- Gradually beat in ½ cup of confectioners’ sugar until it is fully incorporated and the mixture is smooth.
- Add the vanilla extract and 1 tablespoon of milk (or heavy cream), then beat until the mixture is smooth and well combined. Subsequently, beat in the remaining ½ cup of confectioners’ sugar and the additional 1-2 tablespoons of milk until a smooth consistency is achieved.
- Carefully add the marshmallow cream to the mixture. For easier handling, spray your measuring cup with non-stick spray before measuring the marshmallow cream so it slides out effortlessly.
- Mix everything together until thoroughly combined and smooth. Refrigerate the marshmallow filling until you are ready to use it, which helps it firm up slightly.
Chocolate Buttercream Frosting
- Using an electric mixer, cream and beat the room temperature salted butter for about 3-4 minutes on medium speed, until it becomes light in color and fluffy.
- Periodically scrape down the sides of the bowl to ensure all butter is evenly incorporated.
- Add the powdered sugar, unsweetened cocoa powder, vanilla extract, and milk to the creamed butter.
- Mix on a low speed initially until the powdered sugar and cocoa powder are fully incorporated, then increase speed to medium and beat until the frosting is smooth and creamy. Set aside until needed.
- Once the brownie cupcakes are completely cool, you are ready to fill them with the prepared marshmallow filling. You have two options for filling: either use a piping bag fitted with a Wilton tip #230 for a clean, professional look, or carefully use a small knife to cut a cone-like shape out of the center of each cupcake, fill with marshmallow cream, and replace the removed top. (I personally found the Wilton tip method to be very efficient!)
- Next, generously frost each cupcake with the chocolate buttercream using your preferred piping technique or simply spreading it with a knife. For the finishing touch, top each cupcake with a sprinkle of mini marshmallows and a piece of Hershey’s chocolate bar.
