When the words ‘cherry cheesecake’ grace a menu or conversation, what memories does it evoke for you? Perhaps it harks back to your beloved Aunt Jane, renowned for her signature cheesecake at every family gathering, a culinary tradition that transcended mere dessert to become a symbol of togetherness. Or perhaps it’s the centerpiece of a special romantic evening, its luxurious texture and vibrant flavor enhancing moments of intimacy and joy. For many, it’s simply a timeless classic, a dessert so inherently perfect that its appeal is universal and unforgettable. This Cherry Cheesecake Poke Cake taps into that very essence, promising not just a treat for the palate, but a spoonful of cherished memories, new and old.
I recall my very first encounter with cheesecake, a moment that forever imprinted itself on my culinary memory. It was a humble Sara Lee Cherry Cheesecake, but its creamy texture and sweet-tart cherry topping were nothing short of revelatory. Before that moment, I hadn’t truly grasped the magic of cheesecake; I certainly hadn’t considered its caloric implications! But that experience solidified cheesecake as an unforgettable delight in my mind. This recipe aims to capture that same sense of wonder, making every bite a journey back to that first, perfect taste.
The beauty of a poke cake lies in its incredible adaptability, allowing for endless flavor combinations. While my initial thought was to create a blueberry version of this poke cake, I quickly realized I was out of blueberry pie filling. However, this happy accident reinforced the idea that you can truly customize this dessert to your heart’s content! Feel free to use any pie filling you have on hand – be it strawberry, apple, or even peach – to craft your absolute favorite cheesecake poke cake. The possibilities are as endless as your imagination, allowing you to tailor this treat to any occasion or preference.
Despite the lure of other fruit fillings, I confess a lifelong favoritism for cherries, especially when it comes to pie. Cherry pie holds a special place as my all-time favorite fruit pie, a classic comfort that never fails to satisfy. It’s that sweet-tart balance, the vibrant color, and the comforting aroma that makes it so irresistible. It’s no wonder that these Rustic Cherry Streusel Crescent Pies are one of our family’s most requested desserts, not just for their incredible flavor but also for their charming, rustic appearance. This poke cake continues that cherished tradition, bringing the joy of cherries to a new, exciting format.

Essential Ingredients for Your Cherry Cheesecake Poke Cake
Crafting this incredible dessert requires a few key ingredients, most of which are pantry staples or easily found at your local grocery store. The beauty of this recipe is its simplicity and the way each component contributes to a truly spectacular final product. Gather these items to create your very own Cherry Cheesecake Poke Cake masterpiece:
For the Cake Base
- 1 box yellow or white cake mix, prepared and already baked in a 9×13 inch pan. A box mix ensures a consistent and moist base, making the process wonderfully straightforward.
For the Decadent Cherry Cheesecake Filling
This is where the magic happens, infusing the cake with rich, creamy, and fruity goodness.
- Sweetened condensed milk: The secret ingredient that creates incredible moisture and sweetness within the cake.
- Cherry pie filling: Providing that signature sweet and tart cherry flavor and beautiful vibrant color.
- Milk or whipping cream: To achieve the perfect pourable consistency for the cheesecake filling.
- Cream cheese, softened: For the classic tangy, rich cheesecake flavor and creamy texture.
For the Dreamy Cream Cheese Whipped Topping
This light and airy topping adds another layer of creaminess and balances the rich filling.
- Cool-Whip: A convenient and stable base for our whipped topping.
- Cream cheese, softened: To give the whipped topping a delightful cheesecake-like tang and body.
- Powdered sugar: For sweetness and a smooth, lump-free texture in the topping.
- Vanilla extract: A touch of warmth and flavor depth for the topping.
For the Final Flourish and Topping
- Additional cherry pie filling: For an extra burst of cherry flavor and a beautiful presentation.
- Optional garnishes: Graham cracker crumbs or grated white chocolate for added texture and visual appeal.
Crafting Your Cherry Cheesecake Poke Cake: A Step-by-Step Guide
Creating this show-stopping Cherry Cheesecake Poke Cake is a rewarding process, and surprisingly simple! Follow these steps carefully to ensure a perfectly moist, flavorful, and beautifully layered dessert that will impress everyone. The key is in preparing each component with care and allowing proper chilling time for the flavors to meld and the cake to set.
- Prepare the Cake Base: Once your yellow or white cake is baked according to package directions in a 9×13 inch pan, and while it is still warm, it’s time to create the signature ‘poke’ effect. Using a wooden dowel, the handle of a wooden spoon, or even the blunt end of a chopstick, poke holes all over the surface of the cake. Aim for holes that are about ¾ inch deep and spaced about an inch apart. These holes are crucial as they will allow the delicious filling to seep deep into the cake, ensuring every bite is moist and flavorful. Once poked, slowly and evenly pour the sweetened condensed milk over the entire cake, allowing it to soak into the holes. Set the cake aside to cool slightly while you prepare the cherry cheesecake filling.
Creating the Luscious Cherry Cheesecake Filling
This rich and creamy filling is what truly sets this poke cake apart, bringing that iconic cheesecake flavor to the party.
- Blend the Filling: Begin by reserving one can of cherry pie filling; this will be used for the final topping. In a mixing bowl, combine the remaining can of cherry pie filling with the softened cream cheese and milk (or whipping cream). Blend these ingredients thoroughly using an electric mixer on medium speed until the mixture is completely smooth and has a pourable consistency. Ensure there are no lumps of cream cheese remaining.
- Fill the Cake: Carefully and slowly pour the prepared cherry cheesecake filling over the poked cake. Take your time to ensure the filling seeps into all the holes, creating a beautiful, moist, and flavor-packed interior. Once the filling has been distributed, spoon the reserved can of cherries evenly over the top of the cheesecake layer. Gently spread the cherries to cover the surface, creating a vibrant and appealing base for the whipped topping.
Whipping Up the Cream Cheese Topping
This light and tangy topping adds a perfect creamy finish to your poke cake.
- Prepare the Whipped Topping: In a clean mixing bowl, using an electric mixer on medium speed, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and light. This typically takes 2-3 minutes. Once smooth, gently fold in the Cool-Whip until it is just combined and no streaks remain. Be careful not to overmix, as this can deflate the topping.
- Layer and Chill: Carefully spread the cream cheese whipped topping evenly over the cherry layer on the cake. Use an offset spatula or the back of a spoon to create a smooth, appealing surface. Once topped, cover the cake tightly with plastic wrap to prevent it from drying out and place it in the refrigerator. Chill for at least three hours, or preferably overnight, to allow the cake to absorb all the wonderful flavors and to ensure the filling and topping set properly. This chilling time is crucial for the best texture and taste.
- Serve and Enjoy: When you’re ready to serve this magnificent dessert, remove it from the refrigerator. For an extra touch of elegance and flavor, dollop additional cherries from a fresh can of cherry pie filling (if desired) on top of the whipped cream cake. Slice and serve to rave reviews!
- Optional Garnishes: Enhance your cake further by sprinkling graham cracker crumbs over the top for a subtle crunch, or grated white chocolate for a sophisticated finish. These additions not only add texture but also elevate the visual appeal of your Cherry Cheesecake Poke Cake.
Pro Tip: If you’re making a smaller cake, say an 8×8 or 9×9 inch size, simply divide all the ingredient quantities in half. Also, while highly recommended for moisture and flavor, the sweetened condensed milk can be made optional if you prefer a less intensely sweet cake, or if you’re experimenting with different filling absorption methods.
From the first forkful of the moist cake base, through the rich, tangy cherry cheesecake filling, and up to the light, sweet cream cheese whipped topping, this cherry cheesecake poke cake delivers a sensational blend of creaminess, sweetness, and tartness. It’s a dessert designed to impress, ensuring every single bite is a delicious journey that will undoubtedly leave everyone wanting just one more slice.
So, the next time you’re searching for an indulgent, show-stopping dessert that’s guaranteed to be a hit at any gathering, or simply a luxurious treat for yourself, don’t hesitate. Give this Cherry Cheesecake Poke Cake a try! Its layers of flavor and delightful textures make it a truly unforgettable dessert that you’ll want to revisit again and again.
